pop vp’s great taste: easter edition

popchips aren’t just a great snack…they’re also a great ingredient. (just ask our some of our foodie fans, like hungry girl, lisa lillien and top chef alum, chris crary)

with easter just around the corner, i took to the kitchen to create a sweet treat to serve instead of candy, and riffing on a classic recipe we all remember from childhood, created these:

popchips easter “eggs”

  • 3 bags sweet potato popchips
  • 4 tablespoons butter
  • 2 cups mini marshmallows
  • ¼ cup white chocolate chips

chop the popchips in a food processor until roughly the size of puffed rice cereal. in a saucepan over medium heat melt the butter, then add the marshmallows.  turn the heat to low and mix in the chopped popchips. let cool slightly and then shape into “eggs”.  melt the white chocolate chips in the microwave then drizzle over the top. enjoy!

  1. You had me at sweet potato. Love it. And I love your creativity with none other than chips. I have to try these famous Pop Chips, like, now!

    Because the recipe is similar to that of a Rice Krispie treat, one could take the Pop Chips / marshmallow mixture and fill a plastic egg with it to use it as a mold. Once it’s cooled, pop off the plastic eggs parts and, voila, egg shapes.
