every month, love with food members receive a curated box of unique, seasonal snacks.  for every box delivered, love with food feeds a hungry child in the united states. this month, we’re honored to provide sweet potato popchips alongside a host of other holiday friendly snacking options delivered right to subscribers’ doorsteps.

and to spread even more popchips cheer, each box sold will benefit harvest from the heart - chef ryan scott’s organization dedicated to preparing and delivering meals for less fortunate individuals and families on thanksgiving day.

in the spirit of giving back, here are a couple delicious thanksgiving recipes chef ryan scott whipped up using sweet potato popchips.

fall squash casserole


  • 1 single serve bag (.8oz) of sweet potato popchips, crushed
  • 2 cups crookneck squash, sliced
  • 2 cups zucchini, sliced
  • ¼ cup onion, minced
  • 2 eggs, beaten
  • 1 ½ cups gruyere cheese, shredded
  • 1/3 cup parmesan cheese, grated
  • ¾ cup whole milk
  • 1/4 cup butter, melted
  • ½ teaspoon nutmeg
  • ½ teaspoon ground ginger
  • 1 teaspoon paprika
  • 1 teaspoon salt


  • preheat oven to 400 degrees. in a large skillet place squash and a small amount of water over medium high heat and cover.  let steam until tender, about 5 to 10 minutes. in a bowl, mix together popchips and cheeses.  take half and mix with the cooked squash, reserving the remaining half for later. whisk together eggs, milk and spices and combine with squash mixture.  fold in some of the melted butter and some black pepper if you desire. toss remaining chip/cheese mixture in about 2 tablespoons of melted butter spread squash mixture in a casserole dish and sprinkle with remaining chip/cheese crumb topping. bake, covered with foil for 18 minutes, then remove foil and bake for 7 more minutes, or until lighting browned.

green olive tapenade snack bites


  • sweet potato popchips
  • 1 cup green olive, pitted
  • ½ cup shallot, minced
  • 1 garlic clove, peeled
  • 1 tablespoon capers, drained and rinsed
  • 3 anchovy filets
  • zest & juice of half a lemon
  • black pepper, ground, for taste
  • 1 teaspoon dijon mustard
  • 2 tablespoons italian parsley, chopped
  • 1 ½ tablespoons extra virgin olive oil
  • 1 cup goat cheese


  • coarsely chop olives, garlic, capers, shallots, anchovies and lemon zest on cutting board, or in a food processor until incorporated, but still chunky. place chopped mixture in a bowl and add pepper, mustard, parsley and lemon juice and stir in enough olive oil to bind mixture together. spread goat cheese on a sweet potato popchips and then a small amount of tapenade on goat cheese.  or, place in bowls and let guests build their own.

it’s not everyday that an international popstar appears at a local high school to perform a private concert.  but that’s exactly what happened in lakewood, colorado today, when katy perry arrived (on her birthday) to reward the lakewood high school students for creating the winning gma music video for “roar” — her hit song from her incredible new album, prism.

the students of lakewood submitted their winning lip dub video, and got our attention by involving the entire school! we’re talking every club. every athletic team. the entire student body! the best part? they created all this awesomeness in just one take! we couldn’t believe it and neither could katy.  she was so impressed, that she named the lakewood tigers “the school with the loudest roar” and ultimately, the champions.

as if we didn’t like these kids enough already, the tigers are using this opportunity to give back to their community by raising funds for colorado’s flood relief.  and they are challenging every high school in america to do the same!  talk about popstar status!  to support this incredible cause, popchips donated 2,000 bags of katy’s kettle corn to lakewood high school.

halloween bites, frights and delights!

what’s better than snacking on popchips? snacking on popchips disguised as spooky spiders, snack bats, and vampire bites! here’s how to make this halloween deliciously creepy and tastefully crawly by scaring your friends and family into a fun feeding frenzy…

how to make halloween spider bites with popchips

overcome snack-naphobia with these tasty spider bites. 

you will need:

  • original popchips
  • peanut butter
  • licorice
  • candy eyeballs (or raisins)


ingredients to make popchips' spooky spider bites for halloween


take a chip and spread peanut butter on one side. cut the licorice into thin strips, one inch long. lay 6 licorice legs on top of the peanut butter, 3 on each side. take another chip, spread peanut butter on one side and lay the sticky side on top of the legs to create the body of the popchips spider! to add the eyes, dip two candy eyeballs (or raisins) in peanut butter and place towards the edge of one of the sides that doesn’t have legs. repeat until you have plenty of perfectly creepy snacks!

our halloween motto is “no tricks. just treats.” and these snack bats are the perfect way to sweeten up your spooky side, with half the fat and calories in frightfully fried chips.

you will need:

  • katy’s kettle corn popchips
  • large marshmallows
  • red frosting
  • candy eyeballs

take a marshmallow and towards the top, cut two little slits on opposite sides. insert a corner of a chip in each slit until they stay in place. these are the bats wings. using your red frosting, make two little dots for the eyes on the front of the marshmallow and stick the candy eyeballs in place. repeat until your plate is covered in bats! beware: popchips snack bats are known to attract all sorts of devilish snackers.

you don’t have to twi-hard to sink your teeth into these bloody (delicious) treats.

you will need:

  • katy’s kettle corn popchips
  • white chocolate chips
  • red food coloring

ingredients for popchips vampire bites


melt the white chocolate chips in a bowl over a pot of boiling water or in the microwave. add red food coloring until you get a deep color like blood. dip one side of a chip into the melted chocolate and let it drip down the sides of the chip. place on a baking sheet lined with parchment paper to cool. invite over count snackula and enjoy.

what’s your favorite popchips flavor & what new flavor would you love to create? my favorite flavor is sweet potato. i’d love to create a cocoa dusted sweet potato popchips flavor.

where’s craziest place you’ve ever snacked, or want to? machu picchu.

what are your top three guilty pleasures? guacamole, salon quality hair products, and lululemon active wear.

which pop icon (alive or not) would you love to meet, greet & eat with? steve carrell or the dalai lama.

what superhero or cartoon character is most like you? or, which would you like to be? i’d be dori from finding nemo, but only for one week.

besides snacking, what do you like to do in your free time? running, bar method (new obsession), hiking, anything outdoors, finding new restaurants and frequenting local favorites, spending time with friends, cooking, learning new skills, traveling/exploring.

what charity are you donating to and why? last year at this time, i signed up with team in training, a program of the leukemia & lymphoma society, to train for my first half marathon. it was an enormous challenge mentally and physically, and to boot i committed to raise $3,900 for the cause. the entire experience was challenging and rewarding in ways i wouldn’t have dreamt of. since then, i’ve run 3 half marathons and a full marathon! oh, and on a whim, i participated in an olympic distance triathalon, something that would not have been even fathomable if i hadn’t been training with the run team.

also, since my start with team in training, i’ve met incredible athletes who have fought and won the battle with blood cancer, and taken in story after story of heart wrenching and heart warming life moments from my teammates’ who’s lives have been affected by the disease.

what i’ve come to hold true is that the miles of running and physical exertion we push ourselves through is nothing compared to the battle these individuals have had to face: “cancer sucks more”. but one thing is clear – the leukemia & lymphoma society is impacting the quality of life and treatment for patients and their families in major ways. and, the research and programs that are directly funded by the money i raise is impacting the survival and hope for thousands of cancer patients, blood cancer and beyond. i am proud to be connected to an amazing organization.

this season, i am training for the nike women’s marathon in october. i am so grateful to be able to donate to such an important cause and organization.
