#popyourbbq with top chef dakota weiss

thinking about throwing a bbq this fourth of july? whether you’re hitting the beach with friends or hosting your own backyard shindig, it’s time to get outside, eat good food, and celebrate america’s birthday!

we teamed up with top chef alum dakota weiss to create delicious summertime recipes that will give you even more to love about independence day.

grilled shrimp salad with sea salt popchips


serves: 4
preparation: 35 minutes

ingredients for the shrimp + marinade:

- 2 lbs. shrimp (16/20) peeled and deveined
- ½ bunch parsley
- ½ bunch cilantro
- 5 each garlic cloves
- ½ cup extra virgin olive oil
- 2 each lemons, juiced and zested


- add all of the above items (except for the shrimp) into a food processor and puree well. Toss the shrimp in the mixture, let it sit for 10 minutes.

- grill the shrimp and lightly season with salt and black pepper

ingredients for the pickled fresno chiles:

- 1 fresno chile, sliced
- 1 cup apple cider vinegar
- 2 tbsp sugar
- 2 tbsp salt
- 1 each cinnamon stick
- 1 tbsp mustard seeds
- 1 tbsp coriander seeds
- 1 tbsp black pepper corns


- add all of the ingredients (except for the chills) into a pot and bring it to a boil.

- let the mixture sit for 5 minutes

- strain off the seeds and pour over the chills, let them soak until the mixture is chilled

ingredients for the shrimp salad:

- ¼ cup dill, chopped
- 1 bag sea salt popchips, crushed

direction for the shrimp salad:

- add the grilled shrimp with the dill, popchips and pickled chills and mix well

- season with salt as needed

grilled kobe dog with bbq popchips, pickled cabbage and heirloom tomato salad


serves: 4
preparation: 15 minutes

 ingredients for hot dogs:

- 4 each kobe beef hot dogs
- 4 each brioche buns
- 1 bag bbq popchips, crushed

ingredients for pickled cabbage:

- 1 green cabbage, small diced
- 1 cup sherry vinegar
- 2 tbsp mustard seeds
- 2 tbsp brown sugar
- 3 tbsp kosher salt
- 1 each bay leaf

directions for pickled cabbage:

- bring the vinegar, salt, sugar, mustard seeds and bay leaf to a boil. Let it steep for 20 minutes.

- add the cabbage and let it sit in the pickling mixture for 30 minutes.

- remove the liquid and the bay leaf and you are ready to go.

ingredients for heirloom tomato salad:

- 1 baby heirloom tomatoes, sliced in half
- 3 tbsp parsley, chopped
- 3 tbsp extra virgin olive oil
- 1 each garlic clove, minced
- kosher salt, to taste


- toss all ingredients together and season with salt

- grill your hot dog to your desired liking (I like mine with a little bit of char on them). Toast the buns slightly on the grill. Crush the BBQ popchips and sprinkle on top of the tomato salad for a super fun crunchy, smoky surprise.

- load them up with your pickled cabbage and tomatoes and munch away!

deviled Egg with sea salt popchips 


serves: 4
preparation: 30 minutes


- 6 eggs
- ½ cup mayonnaise
- 1 tbsp whole grain mustard
- 1 tsp. turmeric
- 1 tsp garlic, minced
- 1 each lemon, juiced and zested
- 1 bag sea salt popchips, crushed
- kosher salt to taste


- place eggs in a pot of cold water, bring to a boil. once the water boils turn off the heat, cover the pot with foil and let eggs sit for 10 minutes. remove eggs and place in ice water until cool enough to touch, about 4 minutes.

- slice eggs in half and set yolks aside, line the halved egg white “shells” on a plate and keep cold.

- add the yolks and the rest of the ingredients into a cuisinart and puree until well mixed, season with your salt to your liking.

- using a piping bag (if you don’t have a piping bag you can use a zip lock bag and cut the corner off so you have a tip to use to pipe the filling in)

- pipe the filling into the egg whites, sprinkle the top with the crushed sea salt popchips.

pb&j with banana and sea salt popchips


serves: 4
preparation: 10 minutes


- 4 slices white bread
- 1 banana, sliced
- ¼ cup unsalted butter
- 1/3 cup peanut butter
- 1/3 cup strawberry jam
- kosher salt
- 1 bag sea salt popchips crushed


- lay all bread flat

- spread on peanut butter and butter onto one side and the strawberry jam on the other.

- add the sliced bananas, sprinkle with a little kosher salt and then some of the crushed popchips place the jam bread on top and cut into four cute little triangles.

crackling cole slaw with bbq popchips


serves: 4
preparation: 10 minutes


- 1 bag bbq popchips, crushed
- ½ head napa cabbage, shredded
- ¼ head red cabbage, shredded
- 1 bunch cilantro, chopped
- 2 each carrots, grated
- ½ red onions, shaved thin
- kosher salt, to your taste

ingredients for honey lime dressing:

- 1 cup mayonnaise
- 1/3 cup honey
- 3 each limes, juiced and zested
- ½ tbls celery salt
- ½ cup buttermilk
- 1 tsp cayenne pepper
- 2 tbls apple cider vinegar
- kosher salt , to your taste


-  whisk together all ingredients and season to your liking .

- toss the cabbage mixture with the popchips and the dressing and taste for seasoning.

it’s the weekend. st. patrick’s day is right around the corner and happy hour is calling your name. if you are anything like us, finding that perfect salty snack to go with your favorite craft beer gets your taste buds buzzing. our friends at arizona beer week took on the tough task of snacking and sipping to find the perfect popchips and craft brew pairings. here’s how to kick off your st. patrick’s day weekend by snacking responsibly!

original popchips with beer pairingpopchips original 
pair with: mudshark up river lager, four peaks sunbru, or omission

popchips’ original is a crunchy version craft beer’s lighter styles. mudshark up river lager and four peaks sunbru are obvious choices, however, most of your favorite beers will work well with this chip. since popchips have been certified gluten free, you might enjoy it with an omission lager or pale ale, specially crafted to remove the gluten. o-mission accomplished!

pair with: sleepy dog’s red rover, four peaks kiltlifter, or prescott brewing’s liquid amber

brown sugar and tomato are dominant in this chip followed by onion, garlic, spice and salt. sleepy dog’s red rover bring sweet caramel malts and finishes rich and sweet if one prefers to punch up the bold barbecue flavors. the dry finish of four peaks kiltlifter and the splash of hop bitterness in prescott brewing’s liquid amber provide a wash of the tomato revealing the spiciness of paprika.

sweet potato has a dry character if we’re using beer terminology. our favorite pairing was mudshark full moon belgian style white ale. at 8.5%, this white really benefited from the sweet potato which mellowed the slight burn of alcohol in this bigger beer. we also coaxed out notes of caramel and toffee in the chip when paired with prescott brewing’s liquid amber.

pair with: sierra nevada kellerweis, prescott brewing’s ponderosa ipa, sierra nevaga torpedo or four peaks hop knot.

there is nothing subtle about sea salt and vinegar chips and out tasters went in two different directions with this audacious snack. sierra nevada kellerweis normally restrained citrus marmalade tartness gets a kick in the mouth with each bite. we experienced a one two punch when we chose prescott brewing’s ponderosa ipa, sierra nevada torpedo and four peaks hop knot. hop bitterness jabs the tongue and holds the bracing acetic acids of the vinegar at bay until kaboom! the left hook from sourtown.

“wow, i could eat these all day with this”, exclaimed one of our panelists. the beer was deschutes black butte porter. the creamy cheddar worked well with the porter’s distinct ashy toasted malts. we also enjoyed this chip with all of the ipas on our flight. sharp cheddar and hop bitterness were great companions.

while most hop-centric beer drinkers are familiar with the citrus and pine flavors from american hops, fewer are familiar with the garlic and onion character of hops like summit and columbus hops. sour cream and onion popchips worked nicely with the ipas in our flight. widmer’s hopside down ipl (india pale lager) and firestone walker’s union jack do not feature these oniony hops, but work nicely with the onion, garlic and buttermilk in the chips.

  • whole, fresh jalapeños (not canned)
  • ½ tablespoon of fat free cream cheese or all-natural peanut butter
  • nacho tortilla popchips
  • tomatoes
  • onions
  • cilantro


  • set oven to broil at 500 degrees. cut each jalapeño in half and hallow out the seeds. fill each jalapeño slice with a ½ tablespoon of fat free cream cheese or peanut butter. top each slice with fresh ingredients. finely diced tomatoes and onions for something savory. place jalapeños on a baking sheet and broil in oven for 6-8 minutes. once complete top your savory bits with cilantro and crushed nacho tortilla popchips (and for the sweeter bites add crushed katy’s kettle corn popchips).

topped with barbeque popchips for extra crunch and flavor


  • cups hickory wood chips
  • 1 (2-pound) head green cabbage
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon salt
  • 2 links hot turkey italian sausage (about 6 ounces)
  • 1 1/2 cups chopped onion
  • 2 garlic cloves, minced
  • 2 jalapeño peppers, seeded and minced
  • 1/4 cup barbecue sauce
  • barbeque popchips


soak wood chips in water 1 hour. to prepare grill for indirect grilling, place a disposable aluminum foil pan in center of grill. arrange charcoal around foil pan; heat to medium heat. crumple a 12-inch-long piece of aluminum foil with your hands to form a 3-inch ring. place foil ring on grill rack over foil pan. cut core from cabbage to create a cone-shaped cavity about 4 inches wide and 3 inches deep. discard core. place cabbage, cavity side up, in foil ring. sprinkle cavity with pepper and salt. remove casings from sausage. cook sausage in a large nonstick skillet over medium-high heat until browned, stirring to crumble. add onion, garlic, and jalapeño to pan; sauté 3 minutes or until lightly browned. stir in barbecue sauce. spoon sausage mixture into cavity in cabbage. tent cabbage loosely with additional aluminum foil. arrange half of wood chips over coals. cover grill, and grill 40 minutes or until tender when pierced with a skewer. add additional wood chips and charcoal as needed. remove foil from top of cabbage, and grill an additional 50 minutes or until browned. remove any dried or charred leaves. present stuffed cabbage whole, then cut into wedges. top with barbeque popchips for crunch and extra flavor

jillian michaels’ black bean dip

  • 1 (15 ounce) can no-sodium black beans, rinsed and drained
  • ½ cup fresh cilantro leaves
  • ¼ cup chopped red onion
  • 1 garlic clove, finely chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon orange juice
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon minced, canned chipotle chile in adobo
  • ¼ teaspoon salt


in the work bowl of a food processor, place the beans, cilantro leaves, onion, garlic, lime juice, orange juice, olive oil, chile, and salt. process until the dip is smooth and creamy, scraping down the sides of the bowl once or twice or as needed.

salmon slidersingredients:

  • slider buns
  • salmon filets, cut to fit buns
  • avocado
  • plain yogurt
  • juice from one lemon
  • mayonnaise
  • capers
  • side of popchips

directions: grill the salmon filets skin side down. for the sauce, blend the yogurt, lemon juice, mayo, and capers together. toast the buns and assemble your sliders! top off with a generous amount of sauce and a slice of avocado.

green olive tapenade snack bites ingredients:

  • sweet potato popchips
  • 1 cup green olive, pitted
  • ½ cup shallot, minced
  • 1 garlic clove, peeled
  • 1 tablespoon capers, drained and rinsed
  • 3 anchovy filets
  • zest & juice of half a lemon
  • black pepper, ground, for taste
  • 1 teaspoon dijon mustard
  • 2 tablespoons italian parsley, chopped
  • 1 ½ tablespoons extra virgin olive oil
  • 1 cup goat cheese

directions: coarsely chop olives, garlic, capers, shallots, anchovies and lemon zest on cutting board, or in a food processor until incorporated, but still chunky. place chopped mixture in a bowl and add pepper, mustard, parsley and lemon juice and stir in enough olive oil to bind mixture together. spread goat cheese on a sweet potato popchips and then a small amount of tapenade on goat cheese.  or, place in bowls and let guests build their own.

sweet and sour turkey meatballs by fresh and foodie

sweet and sour turkey meatlballs ingredients:

  • 1 tablespoon extra virgin olive oil
  • 3/4 cup finely chopped red onion (about half of a small onion)
  • 2 large garlic cloves, very finely minced
  • 1 28-ounce can Italian-style crushed tomatoes
  • 8 ounces beef broth
  • 1/4 cup packed brown sugar
  • 1 tablespoon fresh lemon juice
  • 1 pound ground turkey
  • 2 snack sized bags (approximately 40 chips) of sour cream and onion popchips, crushed into very small pieces and lightly toasted in a dry saute pan over medium heat until lightly browned
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 large egg, lightly beaten
  • chopped chives, for garnish (optional)

directions: in a large, flat bottom skillet, heat the olive oil over medium high heat until hot. add onion and cook for about 4 minutes, or until softened. add garlic and cook for an additional minute or two. add crushed tomatoes, beef broth, brown sugar and lemon juice and stir to combine. cover and bring sauce to a simmer while assembling the meatballs. in a large bowl, lightly combine ground turkey, crushed and toasted popchips, salt, pepper and egg. don’t be afraid to use your hands! once well mixed, shape into approximately 1 to 1.5-inch balls (recipe should yield about 20 meatballs). gently drop meatballs into simmering sauce, partially cover and let cook for an hour. i like the meatballs on their own with some chopped chives, but they would also be delicious as a sandwich on toasted italian bread.

  • 1 box gluten-free lundberg creamy parmesan risotto made using less 1/4 cup less water.
  • 2 cups sweet potato chunks
  • 36 sweet potato popchips (ground up in a food processor)
  • 1 tsp agave nectar

directions: pre-heat the oven to 375 degrees. cook the lundberg creamy parmesan risotto according to the box and use 1/4 cup less water. the risotto will come out a little more on the dryer side which helps in making the cakes stick together better. warm up the sweet potato chunks in the microwave for about 30 seconds so they are not frozen solid but only slightly warm. too much heat and the potato will get mushy and the paste will not work. put the sweet potato chunks in a food processor along with the 1 tsp of agave nectar and blend until you get a semi-chunky paste. the nectar sweetens the sweet potato just a tad. put the finished risotto in the fridge for about 20-30 minutes to cool it down and harden the risotto a bit so it’s sticky. mix in the sweet potato paste. form the risotto, sweet potato mix into cakes, and then on a plate roll the cakes in the sweet potato pop chips breading. spray non-stick cooking spray on a baking sheet, and place the sweet potato risotto cakes on the baking sheet. bake the cakes on one side for 8 minutes. turn the cakes over, and bake for another 8 minutes.

for the shrimp:

  • 1 dozen shrimp, peeled and deveined
  • 2 tsp agave nectar
  • 1/4 cup popchips crumbs (about 15 chips)
  • 1/8 cup shredded coconut, chopped

for the dipping sauce:

  • 2 fresh mangoes, peeled and chopped
  • 1 tbsp pineapple juice
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • juice of 1/2 lime
  • 2 tbsp fresh cilantro leaves

directions: preheat oven to 400 degrees and combine the popchips crumbs and coconut on a small plate.  drizzle the agave nectar over the shrimp and toss to combine, then press each shrimp into the breading to coat each side.  lay shrimp out on a baking sheet lined with nonstick foil.  bake for 15 minutes, flipping the shrimp halfway through. while the shrimp is baking, put all of the dipping sauce ingredients into a food processor or blender and blend until smooth. delicious!

fore!  watch out, snackers! we’re headed to the 2014 waste management phoenix open.  in case you haven’t heard, this isn’t any old pga tour stop.  forget hushed crowds and golf claps, the wm phoenix open boasts the loudest hole in golf (and we boast the loudest crunch in chips)!


the 16th hole at tpc scottsdale is famously rambunctious and we couldn’t think of a better place to #bringthefun to 2014! the anticipation is building as we gear up for some serious snacking.  but before we swing into action on the course, we’re getting our snackers ‘in the chips’ around town.
