almond and popchips-crusted chicken breast 

jillian michaels' recipe: almond and popchips-crusted chicken breast

crusted with original popchips for added flavor and crunch

ingredients:

  • ½ cup unsalted almonds, toasted
  • ½ cup of original potato popchips
  • 2 tablespoons extra-virgin olive oil
  • ¾ teaspoon grated lemon zest
  • 1 tablespoon fresh lemon juice
  • ¾ teaspoon dried rosemary
  • 1 garlic clove
  • ¼ teaspoon salt
  • 4-to-5 ounce boneless, skinless chicken breast halves

directions:

  • preheat oven to 425 degrees f. in the work bowl of a food processor, place the almonds, popchips, olive oil, lemon zest and juice, rosemary, garlic, and salt.  process until coarsely chopped; the mixture will be a thick paste. arrange the chicken breast halves in a baking dish. divide the almond paste and spread on the breasts; pat down to cover each breast completely. roast in the oven until cooked through and an instant-read thermometer reads 165 deg f. to 170 deg f., about 10 minutes. loosely tent with foil and let stand for 5 to 10 minutes before serving.

sweetened with katy’s kettle corn popchips

ingredients:

  • 2 pounds skinless, boneless chicken breast halves
  • 1/2 cup light mayonnaise
  • 1/2 cup plain fat-free greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/3 cup chopped celery
  • 1/3 cup sweetened dried cranberries
  • 1/2 cup of crushed katy’s kettle corn popchips
  • 7 tablespoons (about 2 ounces) coarsely chopped smoked almonds
  • 6 cups mixed salad greens

procedure

  • fill a dutch oven two-thirds full of water; bring to a boil. wrap each chicken breast half completely and tightly in heavy-duty plastic wrap. add the chicken to boiling water. cover and simmer for 20 minutes or until a thermometer registers 165°. remove from pan, and let stand for 5 minutes. unwrap chicken and shred; refrigerate for 30 minutes or until cold. combine mayonnaise and the next 7 ingredients (through black pepper) in a large bowl, stirring with a whisk until combined. add chicken, 1/3 cup celery, cranberries, and almonds; toss well to coat. cover and refrigerate for 1 hour. serve over salad greens.

3. it’s not just about the cardio training. many people believe if they run for an hour they are shedding the pounds. the reality is, your body gets used to this type of activity. strength training four times a week is a great way to increase your metabolism by 6-7 percent!

DIY holiday bows and ribbons

’tis the season to be snacking and wrapping! so after you’ve enjoyed a bag (or two) of your favorite popchips flavors, re-use the bags to add a little ‘pop’ to your holiday packages. just follow these easy steps…

you will need:

  • empty bags of your favorite popchips flavors (one 3oz or 3.5oz bag is enough for one bow and ribbon for one medium-sized gift box)
  • scissors
  • ruler
  • glue
  • tape

directions:

1. enjoy snacking and sharing on our limited time holiday popchips flavor – salted caramel

2. cut the empty bag along the seams so you have one flat sheet

3. measure and cut 13 strips: four 1×6, four 1×5, and five 1×4. set one of the 1×4 strips aside (this will become the center of your bow)

4. cut the rest of the bag into inch wide strips and set aside (this will become the ribbon)

5. twist each short strip into a loop by lining the ends up together and stapling. you should end up with four loops of each the 1×6, 1×5, and 1×4 strips. twelve loops total

6. glue two loops of the same size (i.e. two 1×6 loops) together to make a figure eight shape. you should end up with two 1×6 figure eights, two 1×5 figure eights, and two 1×4 figure eights

7. criss-cross the two 1×6 figure eights to look like a bow and glue together. add tape if necessary to secure them together. repeat with the 1×5 figure eights and then with the 1×4 figure eights. you should now have three bows, descending in size

8. glue the little bow into the medium sized bow alternating the loops of each one. then glue the medium sized bow into the larger bow, again alternating the loops of each.

9. using the 1×4 strip you set aside make a circle by holding the ends together and taping. glue down this circle into the very middle of your bow.

10. using the long strips you set aside to create the ribbon around your gift by taping them down around the sides.

11. tape your bow on top and rejoice in your creative accomplishment!

mind your munchies – going to a holiday soiree at night? opt for popchips instead of fried chips for lunch that day. or order the grilled chicken lettuce wrap versus the fried taco shell and add an extra scoop of guacamole instead of cheese that day.

pre-party – to reduce cravings, enjoy savory snacks packed with protein – such as a small bag of almonds, veggie sticks with hummus or popchips – before you head to holiday parties.  when you arrive, the spread won’t seem as difficult to resist.

toothpick trick –  it’s easy to be trapped by mindless eating at holiday soirees as the mini meatballs, mozzarella balls and fudge gets passed around. one trick is to utilize the toothpicks.  every time you snack, hold onto the toothpick as a tangible reminder of how much you have consumed.

oh, the weather outside is frightful, but our snacks are so delightful! and since san francisco doesn’t snow – we’ve decided to make our own! this holiday season, we have discovered the silver lining to a snow-less city…literally! whether you live in a winter wonderland or a tropical paradise, these DIY snowflakes, crafted from empty popchips bags, will surely add some festive flair to your holiday decorations. so let it pop!

you will need:

  • 1 share bag of popchips (we used original)
  • scissors
  • tape

snowmaterials

directions:

1. snack on your popchips until the bag is empty.

2. cut along the seams of the bag to make one flat sheet.

3. cut six 5 inch x 5 inch squares out of the bag.

4. start with one square and fold it in half to create a triangle.

5. fold the two bottom corners together to make a smaller triangle (use tape if you need help holding the folds in place).

6. using the same bottom two corners, take one and fold it until the point lines up with the center of the triangle. repeat on the other side.

7. snip off the top with the two points to create a flat line.

8. now it’s time to get creative! cut into both sides of the triangle to create a snowy pattern.

9. unfold your snowflake and repeat with the other squares you cut earlier.
